I’m building an asp saber and using the Veteran SaberCore 2.5 USA. Should i buy the normal or light up switch?

That's entirely up to your personal preference, however you will need a momentary switch regardless. The lit switch will require slightly more wiring and a resistor if you're doing it all on your own.

I ask because it says on the saberforge site for the Veteran 2.5 USA “momentary or illuminated plug and play switch sold separately”, but on the illuminated switch site is says “This switch is only compatible with our champion plug and play kit...”

Seems they simply haven't updated the info for the switches then. The 2.5 boards are relatively new so it's not surprising. They'll work just fine. Here's Saber Forges video of the two 3.5 boards, you can clearly see they use the illuminated momentary switches.
