If you're lucky enough to drive there to the show room, you should do it for sure. From what I've heard about others I think they have all the sabers in their showroom, but it's just a show room. But you can pick them up and get a feel for it, choose what you want and they'll build it for you within like an hour or 2 (pending availability of parts).
Before, Etsy was a bit quicker and is meant for "off the shelf" kind of purchases. It's not literally off the shelf, they still have to assemble and wire up everything. But the parts are more readily available. Which is also why Etsy prefers to do no real custom options, but will allow you to make requests in the comments section for Blade Size, Soundfont (if champion tier or higher is chosen), covertech wheel, blade plug and kill key finish. I've had 2 cases where I even asked for a specific finish in the activation switch and they did it both times (black body with white led ring). Etsy also has some sabers that you cannot get on the site itself.
The main SF site was (past tense) good for if you want basic customizations. Like if you wanted the body all black instead of dual tone. Or you could ask for a certain pommel instead (if the threads matched and looked right as sometimes the pommel isn't the pommel in design). So the site used to allow for minor custom requests. But now with the Custom Shop up and going since August, I'm unsure if they direct ALL minor and major custom requests through there.
If I were you, I'd make the drive. You can do it over the weekend and have your saber then and there instead of waiting 2-3 months.
